My Two Year Plan



About two years ago at the age of 28, I started this little journey I am on. I went back to school and finished my associates degree. Six months ago I picked up and moved away from the people I became closest to in life, to attend a state school on the other side of the state and finish my bachelors degree in Special education and Elementary Education. Now living in a very small town at 30 years old,surrounded by 20-year old students, I am taking further stock in my life.

Three years ago I was diagnosed with Ulcertive Colitis and have since developed the symptoms of Crohns disease. I have terrible allergies, diverticulitis, poly cystic ovarian syndrome, asthma, back problems, and would like to lose 120 pounds to reach my goal weight. I have learned from a past elimination diet, how my body reacts to certain foods. This is all very personal information, I know, but I am putting it out there for a reason.

I have two years until I graduate college. I will be almost 33 years old at that point. I am starting this blog as a way to document my progress and hopefully keep me focused. So here is the plan. As of Three days ago, I eliminated gluten, wheat, dairy, refined sugars, caffeine, shellfish, pork, red meat, whole corn ( I am allowing myself corn tortillas), hydrogenated oils, and all nuts except almonds. I am aiming for all natural, organic, whole foods... Keeping in mind I am a college student on a budget. I am a woman who loves to cook, and I will document this journey in recipes.

The picture above is all the pills as of Monday that I intake daily... some of these are natural supplements and some are prescriptions. I will start each day with a shake... this solves two problems... A. It allows me to actually start having breakfast, thus regulating my metabolism, but also allows me not to have to taste the Cod liver oil, Aloe Vera juice, and brown rice protein.

So here it goes... Goal #1: Drink 8 glasses of water tomorrow. ... wish me luck.

Wow! I'm so proud of you for taking control of your life and your health. More people need to be proactive about their health and educate themselves on what they eat and how it affects their bodies. I was not aware of all your health issues and I really hope this diet will help with some of your issues. Whenever we hang out, I will make sure you're following your plan! I'll keep my slapping hand in prime shape to keep you in line! :-)

My Gall Bladder was removed yesterday.I am determined to start eating healthier.Cutting down on fats is my biggest goal.I have a goal to loose 50 lbs. I will be watching your blog for ideas.Thank you.
